CARAMELIZED ONION ALFREDO
This recipe has become a fan favorite for me as well as amongst my family and friends. It is a unique pasta dish that is easy to prepare and makes great lasting impression on those who try it.
DIRECTIONS
1. Caramelize the Onions
In a large skillet over medium-low-heat, melt the butter with the avocado oil.
Add the sliced onions and a pinch of salt. Cook for 25-25 minutes, stirring occasionally, until the onions are deeply golden, soft, and jammy.
Stir in the soy sauce and fish sauce and cook for 1 more minute.
2. Cook the Pasta
Cook your pasta of choice in well salted, boiling, water until al dente.
Before Draining, reserve 1 cup of pasta water.
3. Build the Sauce
Add garlic and chili flakes to the caramelized onions and cook for about 30 seconds or until fragrant.
Stir in the chili crisp.
Pour in the heavy cream and let is gently simmer for 2 minutes.
4. Make the Sauce
Stir in the parmesan and about 1/4 cup of pasta water, mixing until the cheese melts and the sauce becomes smooth.
5. Add the Pasta
Add the cooked pasta to the skillet and toss well.
Continue adding pasta water a little at a time until the sauce becomes creamy, glossy, and coats the noodles.
6. Finish
Turn off the heat and toss in the cold butter until silky.
Taste and adjust salt if needed.
7. Garnish
Top with extra chili crisp or chili oil and green onions.
Serve immediately.
